Ingredients
- 1 lb Italian sausage (spicy or mild)
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 cups tortellini (fresh or frozen)
- 1 cup spinach
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Heat a large pot over medium heat and brown the Italian sausage, draining any excess fat.
- Add the chopped onion and minced garlic, stirring until the onion is translucent.
