Ingredients

  • 1 lb Italian sausage
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, brown the Italian sausage over medium heat. Crumble it as it cooks and drain any excess fat.
  2. Add the chopped onion, minced garlic, sliced carrots, and chopped celery to the pot. Sauté until the vegetables soften, about 5-7 minutes.
  3. Stir in the diced potatoes and pour in the chicken broth. Bring to a gentle boil, then reduce heat and simmer until the potatoes are tender, approximately 15-20 minutes.
  4. Add the heavy cream, stir well, and season with salt and pepper. Simmer for a few more minutes to blend the flavors.
  5. Serve hot, garnished with fresh parsley.

Notes

Feel free to substitute with chicken sausage or omit the meat for a vegetarian version. Adding shredded cheese during the last simmer creates a cheesy twist.
