Ingredients
- 1 lb Italian sausage
- 4 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 3 celery stalks, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, brown the Italian sausage over medium heat. Crumble it as it cooks and drain any excess fat.
- Add the chopped onion, minced garlic, sliced carrots, and chopped celery to the pot. Sauté until the vegetables soften, about 5-7 minutes.
- Stir in the diced potatoes and pour in the chicken broth. Bring to a gentle boil, then reduce heat and simmer until the potatoes are tender, approximately 15-20 minutes.
- Add the heavy cream, stir well, and season with salt and pepper. Simmer for a few more minutes to blend the flavors.
- Serve hot, garnished with fresh parsley.
Notes
Feel free to substitute with chicken sausage or omit the meat for a vegetarian version. Adding shredded cheese during the last simmer creates a cheesy twist.
