Ingredients
- 1 lb Italian sausage
- 4 cups potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook the Italian sausage over medium heat until it’s nicely browned.
- Add the chopped onion, sliced carrots, and celery; sauté until the vegetables soften.
- Stir in the diced potatoes and pour in the chicken broth. Bring everything to a boil.
- Reduce the heat, then let it simmer until the potatoes become tender, roughly 15-20 minutes.
- Blend in the heavy cream and season with salt and pepper to your taste.
- Serve hot, garnished with fresh parsley.
