Description

A hearty and comforting soup featuring Italian sausage and tender potatoes, perfect for chilly evenings.


Ingredients

  • 1 lb Italian sausage
  • 4 cups potatoes, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, cook the Italian sausage over medium heat until it’s nicely browned.
  2. Add the chopped onion, sliced carrots, and celery; sauté until the vegetables soften.
  3. Stir in the diced potatoes and pour in the chicken broth. Bring everything to a boil.
  4. Reduce the heat, then let it simmer until the potatoes become tender, roughly 15-20 minutes.
  5. Blend in the heavy cream and season with salt and pepper to your taste.
  6. Serve hot, garnished with fresh parsley.

Notes
