Description
Bright, chewy Rice Krispy treats infused with lemon zest and topped with a white-chocolate drizzle for a sunny twist.
Ingredients
- 6 cups Rice Krispies cereal
- 3 tablespoons unsalted butter
- 3 cups mini marshmallows (mix of lemon-flavored and classic)
- Zest of 1 lemon (plus more for garnish)
- 1/2 teaspoon lemon extract (optional)
- 1/2 cup white chocolate chips or melting wafers
- Lemon peel or zest, for garnish
Instructions
- Grease a 9×9-inch baking pan or line it with parchment paper.
- Melt the butter in a large saucepan over low heat.
- Add mini marshmallows and stir until melted and smooth.
- Stir in lemon zest and lemon extract (if using).
- Remove from heat and fold in Rice Krispies cereal until coated.
- Press the mixture into the prepared pan using a buttered spatula.
- Melt white chocolate and drizzle over the treats, finishing with lemon zest.
- Cool for at least 30 minutes, cut into squares, and enjoy.
Notes
For a dairy-free version, substitute vegan butter and dairy-free marshmallows. Store treats in an airtight container for up to 3 days.
