Description
A delightful stuffed beef tenderloin filled with a rich spinach and cream cheese mixture, perfect for holiday gatherings.
Ingredients
- 1 beef tenderloin
- 2 cups spinach
- 8 oz cream cheese
- 2 cloves garlic, minced
- 1/2 cup Parmesan cheese, grated
- Salt to taste
- Pepper to taste
- 2 tbsp olive oil
- 2-3 slices bacon (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant.
- Add the spinach and cook until wilted, about 2-3 minutes.
- In a mixing bowl, combine cream cheese, sautéed spinach, Parmesan, salt, and pepper.
- Carefully butterfly the beef tenderloin to create a pocket for the filling.
- Spread the spinach and cream cheese mixture inside the butterflied beef.
- Roll the tenderloin tightly and secure it with kitchen twine.
- If desired, wrap bacon around the outside of the tenderloin.
- In the same skillet, sear the beef on high heat until browned on all sides.
- Transfer the stuffed tenderloin to the oven and roast for 25-30 minutes until desired doneness.
- Let it rest for about 10 minutes before slicing and serving.
Notes
Allow the beef to rest before slicing to retain juices. You can prepare the filling a day ahead and store it in the fridge.
