Description

A delightful stuffed beef tenderloin filled with a rich spinach and cream cheese mixture, perfect for holiday gatherings.


Ingredients

  • 1 beef tenderloin
  • 2 cups spinach
  • 8 oz cream cheese
  • 2 cloves garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • Salt to taste
  • Pepper to taste
  • 2 tbsp olive oil
  • 2-3 slices bacon (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant.
  3. Add the spinach and cook until wilted, about 2-3 minutes.
  4. In a mixing bowl, combine cream cheese, sautéed spinach, Parmesan, salt, and pepper.
  5. Carefully butterfly the beef tenderloin to create a pocket for the filling.
  6. Spread the spinach and cream cheese mixture inside the butterflied beef.
  7. Roll the tenderloin tightly and secure it with kitchen twine.
  8. If desired, wrap bacon around the outside of the tenderloin.
  9. In the same skillet, sear the beef on high heat until browned on all sides.
  10. Transfer the stuffed tenderloin to the oven and roast for 25-30 minutes until desired doneness.
  11. Let it rest for about 10 minutes before slicing and serving.

Notes

Allow the beef to rest before slicing to retain juices. You can prepare the filling a day ahead and store it in the fridge.
