Ingredients
- 1 pound boneless, skinless chicken thighs
- 1 cup pineapple chunks (fresh or canned)
- 1 cup rice (white or brown)
- 2 cups chicken broth
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Green onions or cilantro for garnish
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Season the chicken thighs with salt and pepper, then add them to the skillet. Cook until browned on both sides, approximately 5-7 minutes in total. Remove the chicken and set it aside.
- In the same skillet, add the chopped onion and minced garlic. Sauté until they soften and become fragrant, about 2-3 minutes.
- Add the rice to the skillet, stirring it to coat in the flavorful oil, then pour in the chicken broth. Stir in the pineapple chunks and soy sauce.
- Return the seared chicken to the skillet, cover it with a lid, and bring everything to a boil.
- Once boiling, reduce the heat to low and let it simmer for about 20 minutes, or until the rice is fluffy and fully cooked, and the chicken is no longer pink.
- Just before serving, garnish with chopped green onions or cilantro for an extra pop of color and flavor.

Consider adding bell peppers or snap peas for more color and crunch.
