A creamy and flavorful corn dip that’s perfect for gatherings, game days, and potlucks.
Ingredients
- 1 cup corn kernels (canned or frozen)
- 1 cup cream cheese, softened
- 1 cup sour cream
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup diced green onions
- 1/2 cup diced red bell pepper
- 1 packet ranch seasoning mix
- Salt and pepper to taste
Instructions
- In a large bowl, combine softened cream cheese, sour cream, and ranch seasoning mix. Blend until smooth.
- Stir in the corn kernels, shredded cheese, diced green onions, and red bell pepper.
- Mix thoroughly to evenly distribute all flavors.
- Add salt and pepper to taste.
- Cover and refrigerate for at least 30 minutes before serving.
- Serve with tortilla chips or fresh crackers.
Notes
For a healthier twist, substitute Greek yogurt for sour cream. Can also use black beans in place of corn for variation.
