A quick and comforting one-pot meal featuring ground turkey, orzo pasta, and spinach, perfect for busy weeknights.
Ingredients
- 1 pound ground turkey
- 1 cup orzo pasta
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth (or low-sodium chicken broth)
- 1 can diced tomatoes (14 oz), with juices
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup baby spinach (optional)
- Grated Parmesan cheese for serving
Instructions
- Heat a large pot over medium heat. Add the ground turkey and break it up with a spatula. Cook until no pink remains, about 6–8 minutes. Season lightly with salt and pepper.
- Push the turkey to one side and add the chopped onion. Sauté until translucent, about 3–4 minutes. Stir in the minced garlic and cook for 30 seconds.
- Add the orzo, chicken broth, and diced tomatoes with their juice. Stir in the Italian seasoning, adjusting salt and pepper as needed.
- Bring the mixture to a boil. Reduce heat to low, cover, and simmer for 10–12 minutes, stirring once halfway through.
- Remove from heat and stir in the spinach until wilted (about 1 minute). Taste and adjust seasoning.
- Serve hot with grated Parmesan on top.
Notes
Use lean ground turkey for a healthier option. For a gluten-free version, swap orzo for gluten-free small pasta or rice. Cool leftovers to room temperature and store in an airtight container for 3–4 days.
