Description
A hearty and comforting one-pot meal featuring pasta, spicy sausage, and a luscious creamy sauce.
Ingredients
- 1 (13oz) pack cajun andouille sausage, cut into coins
- 1 tbsp chopped garlic
- 1 (14.5oz) can chicken broth (about 2 cups)
- ½ cup heavy cream
- 1 (10oz) can Rotel diced tomatoes and chilies
- 8 ounces dry bowtie pasta (½ pound or approximately 2 cups)
- 2 cups shredded cheddar cheese
- 1 tsp cajun seasoning
Instructions
- In a large skillet, cook the sausage over medium heat for about 5 minutes or until browned. Remove from the pan and set aside.
- Sauté the garlic in the remaining grease for about a minute until fragrant. Add chicken broth, diced tomatoes, heavy cream, and cajun seasoning. Stir to combine.
- Add the dry pasta to the skillet, ensuring it is submerged in the liquid. Cover and let it simmer on low for about 14 minutes, until the pasta is cooked.
- Once cooked, add the sausage and cheddar cheese, stirring until the cheese is melted and creamy.
- Serve hot, garnished with fresh parsley if desired.
Notes
Feel free to substitute the sausage with chicken or a plant-based alternative, and experiment with different pasta shapes. For added flavor, sauté bell peppers or onions with the sausage.
