Ingredients

  • 1 (13oz) pack cajun andouille sausage, cut into coins
  • 1 tbsp chopped garlic
  • 1 (14.5oz) can chicken broth (about 2 cups)
  • ½ cup heavy cream
  • 1 (10oz) can Rotel diced tomatoes and chilies
  • 8 ounces dry bowtie pasta (½ pound or approximately 2 cups)
  • 2 cups shredded cheddar cheese
  • 1 tsp cajun seasoning


Instructions

  1. In a large skillet, cook the sausage over medium heat for about 5 minutes or until browned. Remove from the pan and set aside.
  2. Sauté the garlic in the remaining grease for about a minute until fragrant. Add chicken broth, diced tomatoes, heavy cream, and cajun seasoning. Stir to combine.
  3. Add the dry pasta to the skillet, ensuring it is submerged in the liquid. Cover and let it simmer on low for about 14 minutes, until the pasta is cooked.
  4. Once cooked, add the sausage and cheddar cheese, stirring until the cheese is melted and creamy.
  5. Serve hot, garnished with fresh parsley if desired.

Notes

Feel free to substitute the sausage with chicken or a plant-based alternative, and experiment with different pasta shapes. For added flavor, sauté bell peppers or onions with the sausage.
