Ingredients
- 1 cup pumpkin puree
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/4 cup maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon vanilla extract
- 1 cup dark chocolate chips
- Cocoa powder or shredded coconut for coating (optional)
Instructions
- In a mixing bowl, combine the pumpkin puree, rolled oats, almond flour, maple syrup, cinnamon, nutmeg, and vanilla extract. Mix until well combined.
- Chill the mixture in the refrigerator for about 30 minutes to firm up.
- Once chilled, scoop out small portions of the mixture and roll them into balls.
- Melt the dark chocolate in a microwave or over a double boiler until smooth.
- Dip each truffle into the melted chocolate, ensuring fully coated. Roll in cocoa powder or shredded coconut if desired.
- Place the truffles on a baking sheet lined with parchment paper and refrigerate for about 30 minutes to set.
