Ingredients

  • 1 cup pumpkin puree
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon vanilla extract
  • 1 cup dark chocolate chips
  • Cocoa powder or shredded coconut for coating (optional)


Instructions

  1. In a mixing bowl, combine the pumpkin puree, rolled oats, almond flour, maple syrup, cinnamon, nutmeg, and vanilla extract. Mix until well combined.
  2. Chill the mixture in the refrigerator for about 30 minutes to firm up.
