Description

Mini Apple Cheesecakes are adorable and perfectly portioned desserts that capture the flavors of autumn with apples and spices.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 2 cups diced apples
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup oats


Instructions

  1. Preheat your oven to 325°F (160°C) and grease a mini muffin tin.
  2. In a mixing bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until well combined, and press the mixture firmly into the bottom of each muffin cup.
  3. In a separate bowl, beat the softened cream cheese until smooth. Gradually add in 1 cup of sugar and the vanilla extract, blending until creamy. Incorporate the eggs one at a time, mixing well after each addition.
  4. In another bowl, mix together the diced apples, cinnamon, nutmeg, and oats.
  5. Spoon the cream cheese mixture over the crust in each muffin cup. Layer the apple mixture on top of the cream cheese.
  6. Bake for 20-25 minutes or until the cheesecakes are set. Allow them to cool before serving.

Notes

Serve with a drizzle of caramel sauce or whipped cream for an indulgent experience. These cheesecakes freeze well, just wrap them individually before freezing.
