Mini Apple Cheesecakes are adorable and perfectly portioned desserts that capture the flavors of autumn with apples and spices.
Ingredients
- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 2 cups diced apples
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup oats
Instructions
- Preheat your oven to 325°F (160°C) and grease a mini muffin tin.
- In a mixing bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until well combined, and press the mixture firmly into the bottom of each muffin cup.
- In a separate bowl, beat the softened cream cheese until smooth. Gradually add in 1 cup of sugar and the vanilla extract, blending until creamy. Incorporate the eggs one at a time, mixing well after each addition.
- In another bowl, mix together the diced apples, cinnamon, nutmeg, and oats.
- Spoon the cream cheese mixture over the crust in each muffin cup. Layer the apple mixture on top of the cream cheese.
- Bake for 20-25 minutes or until the cheesecakes are set. Allow them to cool before serving.
Notes
Serve with a drizzle of caramel sauce or whipped cream for an indulgent experience. These cheesecakes freeze well, just wrap them individually before freezing.
