  • 4 boneless, skinless chicken breasts
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon dried oregano
  • 2 teaspoons paprika
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1 cup milk
  • 1/4 teaspoon salt (for sauce)
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon paprika (for sauce)
  • 1 cup extra sharp cheddar cheese, shredded by hand


Instructions

  1. Evenly coat chicken breasts with chili powder, garlic powder, onion powder, crushed red pepper flakes, dried oregano, paprika, cumin, salt, and pepper.
  2. Allow chicken to rest for a few minutes for flavor melding.
  3. Heat a skillet over medium-high heat, add a small amount of oil, and sear chicken breasts until golden brown (6-7 minutes per side).
  4. Remove chicken and let it rest to redistribute juices.
  5. Melt butter in a small saucepan over medium heat, gradually whisk in flour until a smooth roux forms.
  6. Slowly add milk while whisking to avoid lumps and cook until thickened.
  7. Stir in salt, cayenne pepper, and paprika.
  8. Remove from heat and mix in shredded cheddar cheese until smooth.
  9. Plate the chicken and pour cheese sauce over each breast. Garnish with fresh parsley or cilantro.

Serve with rice, tortillas, or salad. Adjust spices to taste and consider topping with diced green chiles or avocado for extra flavor.
