Ingredients
- 4 medium sweet potatoes
- 3 tablespoons extra virgin olive oil
- 1 cup crumbled feta cheese
- 1/2 cup chopped Kalamata olives
- 1/4 cup fresh parsley or oregano (chopped)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash the sweet potatoes thoroughly and, if desired, peel them. Cut the sweet potatoes into even-sized cubes.
- In a large bowl, toss the sweet potato cubes with olive oil, salt, and pepper until evenly coated.
- Spread the cubes in a single layer on the prepared baking sheet and bake for 25-30 minutes until they are tender and golden brown.
- Remove the sweet potatoes from the oven and sprinkle with feta cheese and chopped olives while they are still hot.
- Garnish with freshly chopped herbs before serving.
Notes
For a tangy taste, swap feta cheese for goat cheese. For sweetness, use sun-dried tomatoes instead of Kalamata olives.
