Description

Ingredients

  • 4 medium sweet potatoes
  • 3 tablespoons extra virgin olive oil
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped Kalamata olives
  • 1/4 cup fresh parsley or oregano (chopped)
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash the sweet potatoes thoroughly and, if desired, peel them. Cut the sweet potatoes into even-sized cubes.
  3. In a large bowl, toss the sweet potato cubes with olive oil, salt, and pepper until evenly coated.
  4. Spread the cubes in a single layer on the prepared baking sheet and bake for 25-30 minutes until they are tender and golden brown.
  5. Remove the sweet potatoes from the oven and sprinkle with feta cheese and chopped olives while they are still hot.
  6. Garnish with freshly chopped herbs before serving.

Notes

For a tangy taste, swap feta cheese for goat cheese. For sweetness, use sun-dried tomatoes instead of Kalamata olives.
