Ingredients
- 1 ½ lb large shrimp (peeled)
- 1 bunch fresh asparagus
- 4 tbsp olive oil (divided)
- 5 cloves garlic (minced)
- 1 whole red onion (sliced)
- ½ tbsp oregano
- ½ tbsp smoked paprika
- 1 tsp sea salt
- Ground black pepper (to taste)
- 1 whole lemon (juiced)
- 1 cup black olives (pitted)
- 1 cup feta cheese
- ⅓ cup fresh cilantro or parsley
Instructions
- Preheat your oven to 450°F (232°C).
- In a large bowl, toss the shrimp with 2 tablespoons of olive oil, minced garlic, salt, pepper, smoked paprika, oregano, and lemon juice.
- Trim and wash the asparagus thoroughly, then arrange them flat on a baking sheet. Drizzle with 1 tablespoon of olive oil and a pinch of salt.
- Place the seasoned shrimp atop the asparagus and spread the sliced red onions over everything.
- Bake in the middle of the oven for 10 minutes until the shrimp turn golden at the edges and are cooked through.
- Remove from the oven and sprinkle with feta cheese, olives, and fresh cilantro or parsley. Drizzle with the remaining olive oil before serving.
Notes
Consider using other vegetables like zucchini or bell peppers if asparagus isn’t available. Leftovers can be stored in an airtight container for up to 2 days.
