Ingredients
- 1 cup orzo pasta
- 4 cups vegetable broth
- 1 cup diced tomatoes
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 carrot, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté chopped onion and minced garlic until translucent.
- Incorporate diced bell pepper, carrot, and zucchini; cook for about five minutes.
- Add diced tomatoes, vegetable broth, orzo, dried oregano, dried basil, salt, and pepper. Bring to a gentle boil.
- Reduce heat and let the soup simmer for 10-12 minutes until orzo is tender.
- Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley.
Notes
Feel free to customize the veggies based on availability. For a heartier soup, add legumes or use whole wheat orzo.
