Ingredients

  • 1 cup orzo pasta
  • 4 cups vegetable broth
  • 1 cup diced tomatoes
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 carrot, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion and minced garlic until translucent.
  2. Incorporate diced bell pepper, carrot, and zucchini; cook for about five minutes.
  3. Add diced tomatoes, vegetable broth, orzo, dried oregano, dried basil, salt, and pepper. Bring to a gentle boil.
  4. Reduce heat and let the soup simmer for 10-12 minutes until orzo is tender.
  5. Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley.

Notes

Feel free to customize the veggies based on availability. For a heartier soup, add legumes or use whole wheat orzo.
