A vibrant and flavorful chicken bowl featuring zesty marinated chicken, fresh vegetables, and chickpeas, perfect for a quick and nutritious meal.
Ingredients
- 2 chicken breasts
- Juice of 1 lemon
- 2 tablespoons fresh dill, chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, chopped
- 1 cup canned chickpeas, drained and rinsed
- Salt and pepper, to taste
Instructions
- In a bowl, combine lemon juice, dill, olive oil, minced garlic, salt, and pepper. Add the chicken breast, ensuring it’s well-coated, and marinate for at least 30 minutes.
- Preheat a grill to medium-high heat and grill the chicken for 6-7 minutes on each side until fully cooked.
- While the chicken grills, chop your cucumbers, tomatoes, and red onion into bite-sized pieces.
- Once cooked, slice the chicken into strips and layer chickpeas and the chopped vegetables in a bowl. Top with grilled chicken.
- Drizzle with more lemon-dill dressing if desired and serve immediately.
Notes
Garnish with feta cheese or olives, and serve with pita bread or hummus for a complete meal. Store leftovers in an airtight container for up to 3 days.
