Description

A vibrant blend of succulent chicken and fresh vegetables, this Mediterranean chicken stir fry is a quick and satisfying meal packed with flavor.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 3 tbsp extra virgin olive oil (divided for cooking)
  • Salt & black pepper (to taste)
  • 2 medium zucchini (sliced into half-moons)
  • 2 red bell peppers (diced into chunks)
  • 1 large red onion (sliced into strips)
  • 2 cups cherry tomatoes (halved)
  • 1 cup Kalamata olives (pitted and halved)
  • 4 cloves garlic (minced)
  • 1/4 cup sun-dried tomatoes (chopped)
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • 1 lemon (juice only)
  • 0.5 cup feta cheese (crumbled)
  • 2 tbsp fresh parsley (optional garnish)


Instructions

  1. Prep all ingredients: chop the zucchini, bell peppers, and onion; halve the cherry tomatoes and olives; mince the garlic.
  2. In a large skillet over medium-high heat, add 1.5 tablespoons of olive oil. When hot, add chicken pieces and season with salt and pepper. Cook until golden brown and fully cooked, about 5-7 minutes.
  3. Remove chicken from skillet and set aside. In the same skillet, add remaining olive oil. Sauté the onions and garlic until fragrant, about 2 minutes.
  4. Toss in bell peppers and zucchini, sautéing until tender-crisp, around 3-4 minutes.
  5. Return chicken to skillet, mixing in cherry tomatoes, Kalamata olives, sun-dried tomatoes, oregano, basil, and thyme. Stir well and let cook for an additional 2-3 minutes.
  6. Drizzle lemon juice over the dish and fold in crumbled feta cheese. Toss gently before serving.

Notes

Feel free to substitute vegetables based on availability. Serve hot and consider pairing with couscous or crusty bread.
