Description

A delightful Mediterranean bowl with juicy beef meatballs, seasoned roasted potatoes, and fresh veggies, perfect for a quick weeknight dinner or a family brunch.


Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons dried oregano
  • 2 tablespoons olive oil
  • 4 medium potatoes, cubed
  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil (for dressing)
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, egg, minced garlic, salt, black pepper, and dried oregano. Mix well.
  3. Shape the mixture into meatballs and arrange them on a baking sheet lined with parchment paper.
  4. Toss the cubed potatoes with olive oil, salt, and pepper in another bowl, and spread them on a separate baking sheet.
  5. Bake both the meatballs and potatoes for about 20-25 minutes until the meatballs are cooked through and the potatoes are crispy.
  6. While baking, prepare the salad by combining the chopped romaine lettuce, cherry tomatoes, diced cucumber, sliced red onion, and crumbled feta cheese.
  7. For the dressing, whisk together olive oil, red wine vinegar, salt, and pepper, then pour it over the salad and toss gently.
  8. To serve, layer roasted potatoes, followed by meatballs and fresh salad in bowls.

Notes

Feel free to substitute ground turkey or chicken for a lighter option, or switch up the veggies based on your favorites.
