Ingredients
- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons dried oregano
- 2 tablespoons olive oil
- 4 medium potatoes, cubed
- 2 cups chopped romaine lettuce
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil (for dressing)
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, egg, minced garlic, salt, black pepper, and dried oregano. Mix well.
- Shape the mixture into meatballs and arrange them on a baking sheet lined with parchment paper.
- Toss the cubed potatoes with olive oil, salt, and pepper in another bowl, and spread them on a separate baking sheet.
- Bake both the meatballs and potatoes for about 20-25 minutes until the meatballs are cooked through and the potatoes are crispy.
- While baking, prepare the salad by combining the chopped romaine lettuce, cherry tomatoes, diced cucumber, sliced red onion, and crumbled feta cheese.
- For the dressing, whisk together olive oil, red wine vinegar, salt, and pepper, then pour it over the salad and toss gently.
- To serve, layer roasted potatoes, followed by meatballs and fresh salad in bowls.
Notes
Feel free to substitute ground turkey or chicken for a lighter option, or switch up the veggies based on your favorites.
