Ingredients
- 4 chicken breasts
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup spinach
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
- Parmesan cheese for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Season the chicken breasts generously with salt, pepper, and Italian seasoning.
- Cook the chicken for about 5-7 minutes on each side until browned and fully cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, toss in the minced garlic and cook for about 1 minute until fragrant.
- Add the sun-dried tomatoes and cook for another 2 minutes.
- Pour in the chicken broth and heavy cream, stirring to combine.
- Sprinkle in the spinach and return the chicken to the skillet. Simmer for 5-10 minutes until the sauce thickens to your liking.
