Ingredients

  • 4 chicken breasts
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup spinach
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking
  • Parmesan cheese for garnish


Instructions

  1. In a large skillet, heat olive oil over medium heat. Season the chicken breasts generously with salt, pepper, and Italian seasoning.
  2. Cook the chicken for about 5-7 minutes on each side until browned and fully cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, toss in the minced garlic and cook for about 1 minute until fragrant.
  4. Add the sun-dried tomatoes and cook for another 2 minutes.
  5. Pour in the chicken broth and heavy cream, stirring to combine.
  6. Sprinkle in the spinach and return the chicken to the skillet. Simmer for 5-10 minutes until the sauce thickens to your liking.
  7. Serve over pasta or rice, garnished with Parmesan cheese.
