Description
A healthy twist on the classic Olive Garden Zuppa Toscana, this low-carb soup is packed with fresh vegetables and rich flavors, perfect for chilly days.
Ingredients
- 1 head cauliflower, chopped
- 4 cups vegetable or chicken broth
- 2 cups fresh spinach
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the chopped cauliflower and your choice of broth to the pot. Bring to a boil, then reduce heat and simmer until the cauliflower is tender, about 10-15 minutes.
- Stir in the fresh spinach and Italian seasoning, cooking until the spinach is wilted.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
For extra depth of flavor, add some cooked sausage or turkey bacon while sautéing the onion. For a creamier texture, stir in a splash of heavy cream after cooking.
