Description

A healthy twist on the classic Olive Garden Zuppa Toscana, this low-carb soup is packed with fresh vegetables and rich flavors, perfect for chilly days.


Ingredients

  • 1 head cauliflower, chopped
  • 4 cups vegetable or chicken broth
  • 2 cups fresh spinach
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the minced garlic and cook for an additional minute.
  3. Add the chopped cauliflower and your choice of broth to the pot. Bring to a boil, then reduce heat and simmer until the cauliflower is tender, about 10-15 minutes.
  4. Stir in the fresh spinach and Italian seasoning, cooking until the spinach is wilted.
  5. Season with salt and pepper to taste.

Notes
