Ingredients

  • 1 pound ground chicken
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha sauce
  • 1 tablespoon honey or sugar-free sweetener
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 bell pepper, diced
  • 1 green onion, chopped
  • Salt and pepper to taste


Instructions

  1. Heat the olive oil in a pan over medium heat.
  2. Add the minced garlic and grated ginger; sauté until fragrant, about 1 minute.
  3. Incorporate the ground chicken and cook until browned, breaking it apart as it cooks.
  4. Stir in the soy sauce, sriracha, and honey; cook for another 2-3 minutes to combine flavors.
  5. Add the diced bell pepper and sauté until tender.
  6. Season with salt and pepper to taste, and garnish with chopped green onions before serving.

Notes

Serve over cauliflower rice or in lettuce leaves for a low-carb alternative. You can also experiment with different vegetables according to what’s in season.
