Description
A quick and easy lemon pepper chicken that’s juicy and tangy, perfect for weeknight dinners or potlucks.
Ingredients
- 4 chicken breasts
- 2 lemons (zested and juiced)
- 2 teaspoons black pepper
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together the lemon juice, lemon zest, black pepper, olive oil, garlic powder, and salt until combined.
- Arrange the chicken breasts in a baking dish. Pour the lemon-pepper mixture over them and turn each breast so it’s evenly coated.
- Bake in the preheated oven for 25–30 minutes, or until the internal temperature reaches 165°F and the juices run clear.
- Remove from the oven and let the chicken rest for 5 minutes. Serve garnished with chopped fresh parsley.
Notes
Substitute chicken thighs for dark meat and increase bake time slightly. Use bottled lemon juice if fresh lemons are unavailable.
