Ingredients
- 4 chicken breasts (boneless, skinless)
- 1/4 cup lemon juice (fresh)
- 1/2 cup grated Romano cheese (substitute Parmesan if needed)
- 2 cloves garlic, minced (or 1/2 tsp garlic powder)
- Salt and pepper to taste
- Olive oil for cooking
- Pasta, salad, or roasted vegetables for serving
Instructions
- Preheat the oven to 375°F (190°C).
- Pat the chicken breasts dry and season both sides with salt, pepper, and the minced garlic.
- Heat a tablespoon or two of olive oil in an ovenproof skillet over medium heat until shimmering.
- Sear the chicken for 3–4 minutes per side, until each side is golden brown.
- In a small bowl, whisk the lemon juice with the grated Romano until it forms a loose paste.
- Spoon or pour the lemon–Romano mixture over the seared chicken, spreading it evenly.
- Transfer the skillet to the preheated oven and bake for 20–25 minutes, until the internal temperature reaches 165°F (74°C) and the cheese is lightly browned.
- Let the chicken rest for 5 minutes before serving.
Notes
Pound thick breasts for uniform cooking. Use low-sodium options for salt-conscious diets.
