Description

A comforting bowl of lasagna soup combining rich flavors of traditional lasagna with a quick and easy preparation.


Ingredients

  • 8 oz lasagna noodles
  • 1 lb ground beef or sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 24 oz marinara sauce
  • 6 cups chicken broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • Fresh basil for garnish


Instructions

  1. Cook the lasagna noodles according to package instructions. Once cooked, drain and set aside.
  2. In a large pot, brown the ground beef or sausage over medium heat. Add the diced onion and minced garlic, cooking until softened and fragrant, about 5 minutes.
  3. If there’s excess fat from the meat, drain it off. Pour in the marinara sauce, chicken broth, and sprinkle in the Italian seasoning. Bring to a gentle simmer.
  4. Stir in the cooked noodles until well combined in the soup.
  5. Ladle the soup into bowls, adding dollops of ricotta cheese and a sprinkle of mozzarella on each serving. Top with fresh basil before serving.

Notes

For best texture, cook lasagna noodles separately and add just before serving. Adjust seasoning to taste, and use fresh basil for enhanced flavor.
