- 2 garlic cloves, minced
- 8 cups chicken broth
- 1 cup uncooked small pasta (like acini di pepe or orzo)
- 2 cups fresh spinach or kale, chopped
- 1 cup cooked meatballs (beef or turkey)
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant.
- Pour in the chicken broth and bring it to a gentle boil.
- Stir in the uncooked pasta and cook according to the package instructions until al dente.
- Add in the cooked meatballs and the chopped spinach (or kale), stirring to combine.
- Season with salt and pepper to taste.
