Description

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 8 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until translucent.
  3. Stir in the minced garlic, chopped carrots, and celery, and cook for about 5 minutes.
  4. Pour in the vegetable broth and add the dried thyme, oregano, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for 20-30 minutes.
  6. Taste and adjust seasonings as needed.
