Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, chopped
- 2 celery stalks, chopped
- 8 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onions and sauté until translucent.
- Stir in the minced garlic, chopped carrots, and celery, and cook for about 5 minutes.
- Pour in the vegetable broth and add the dried thyme, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 20-30 minutes.
- Taste and adjust seasonings as needed.
