A comforting and nourishing soup made with a blend of vegetables and herbal flavors to warm your soul.
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 1 teaspoon dried thyme
- 6 cups vegetable broth
- 1 bay leaf
- 1 cup spinach, fresh or frozen
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until it’s translucent, about 5 minutes.
- Stir in the minced garlic, sliced carrots, and celery. Cook for another 5 to 7 minutes until softened.
- Toss in the dried thyme, pour in the vegetable broth, and add the bay leaf. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Remove the bay leaf and stir in the spinach. Season with salt and pepper to taste.
- Serve warm and enjoy!
Notes
Feel free to customize with vegetables you have on hand or preferred seasonings. Pair with crusty bread or top with Parmesan for added flavor.
