Description

A comforting and nourishing soup made with a blend of vegetables and herbal flavors to warm your soul.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 teaspoon dried thyme
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 cup spinach, fresh or frozen
  • Salt and pepper to taste


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until it’s translucent, about 5 minutes.
  3. Stir in the minced garlic, sliced carrots, and celery. Cook for another 5 to 7 minutes until softened.
  4. Toss in the dried thyme, pour in the vegetable broth, and add the bay leaf. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Remove the bay leaf and stir in the spinach. Season with salt and pepper to taste.
  6. Serve warm and enjoy!

Notes

Feel free to customize with vegetables you have on hand or preferred seasonings. Pair with crusty bread or top with Parmesan for added flavor.
