Ingredients
- 2 cups cottage cheese
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1/2 cup graham cracker crumbs
- 1/4 cup melted butter
Instructions
- Preheat your oven to 350°F (175°C).
- In a blender, combine the cottage cheese, sugar, vanilla extract, and eggs until smooth.
- In a separate bowl, mix the graham cracker crumbs with melted butter.
- Press the graham cracker mixture into the bottom of individual serving cups or ramekins.
- Pour the cottage cheese mixture over the crust in each cup, filling them almost to the top.
- Bake for 25-30 minutes or until the cheesecakes are set and lightly golden.
- Allow them to cool before refrigerating for at least two hours or until firm.
Notes
For the smoothest texture, blend the cottage cheese until smooth. Garnish with fresh berries or chocolate drizzle for added flavor.
