Description

A quick and elegant side dish featuring sweet carrots and crisp-tender green beans, roasted with honey, lemon, and warming spices.


Ingredients

  • 1 pound carrots, peeled and sliced
  • 1 pound green beans, trimmed
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley, for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the sliced carrots and trimmed green beans with the olive oil, honey, lemon juice, cinnamon, nutmeg, and a good pinch of salt and pepper. Toss until evenly coated.
  3. Spread the vegetables in a single layer on a rimmed baking sheet.
  4. Roast for 20–25 minutes, stirring once halfway through.
  5. Remove from the oven, transfer to a serving dish, and sprinkle with chopped parsley. Serve warm.

Notes

For a vegan option, substitute maple syrup for honey. Use uniform carrot sizes for even cooking.
