Honey Garlic Ground Beef and Broccoli Bowl

Description

A quick and comforting sweet-and-savory skillet meal featuring ground beef and broccoli, served over rice.


Ingredients

  • 3 garlic cloves, minced
  • 1 cup chopped white onion (about 1 medium onion)
  • 1 lb lean ground beef (93% lean recommended)
  • 3 cups broccoli florets, chopped into small pieces
  • 1 cup honey garlic sauce (store-bought or homemade)
  • 4 cups cooked rice, for serving
  • 1 tbsp olive oil, for cooking


Instructions

  1. Heat a large frying pan over medium heat. Add 1 tablespoon of olive oil.
  2. Add the minced garlic and chopped onion to the pan. Cook 1–2 minutes, stirring, until the onion becomes translucent and the garlic is fragrant.
  3. Add the lean ground beef. Break it apart with your spatula and cook 3–4 minutes, until browned and no longer pink. Drain excess fat if your pan has a lot.
  4. Stir in the chopped broccoli florets. Cook 3–4 minutes, stirring occasionally, until the broccoli is slightly tender but still has a bit of crispness.
  5. Pour the honey garlic sauce over the beef and broccoli. Stir well so everything is coated. Cook 1–2 minutes more, letting the sauce heat through and thicken a little.
  6. Scoop cooked rice into bowls and top with the honey garlic ground beef and broccoli. Serve hot.

Notes

Storage: Refrigerate leftovers in an airtight container for up to 3-4 days. Can be frozen for up to 3 months. Don’t overcook the broccoli for a nice crisp texture.
