Description

A quick and delicious rice bowl featuring tender chicken glazed with honey BBQ sauce, served with fresh veggies over fluffy rice.


Ingredients

  • 1 lb chicken breast
  • 1 cup rice (white, brown, or jasmine)
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1 cup broccoli florets
  • 1/2 bell pepper, sliced
  • Salt and pepper to taste
  • Optional toppings: green onions, sesame seeds


Instructions

  1. Cook the rice according to the package instructions (15-20 minutes).
  2. In a large skillet, heat olive oil over medium heat.
  3. Season the chicken breast with salt and pepper, then add to the skillet. Cook until golden brown and cooked through, about 6-8 minutes per side.
  4. In a small bowl, mix honey and BBQ sauce, then pour over the cooked chicken, coating it well.
  5. Add broccoli florets and sliced bell pepper to the skillet. Sauté for an additional 3-4 minutes until veggies are tender.
  6. Serve the chicken and veggies over rice, garnished with green onions and sesame seeds if desired.

Notes

Feel free to adjust the veggies based on your preference. For a lighter option, try using cauliflower rice.
