A quick and delicious rice bowl featuring tender chicken glazed with honey BBQ sauce, served with fresh veggies over fluffy rice.
Ingredients
- 1 lb chicken breast
- 1 cup rice (white, brown, or jasmine)
- 1/2 cup honey
- 1/2 cup BBQ sauce
- 1 tablespoon olive oil
- 1 cup broccoli florets
- 1/2 bell pepper, sliced
- Salt and pepper to taste
- Optional toppings: green onions, sesame seeds
Instructions
- Cook the rice according to the package instructions (15-20 minutes).
- In a large skillet, heat olive oil over medium heat.
- Season the chicken breast with salt and pepper, then add to the skillet. Cook until golden brown and cooked through, about 6-8 minutes per side.
- In a small bowl, mix honey and BBQ sauce, then pour over the cooked chicken, coating it well.
- Add broccoli florets and sliced bell pepper to the skillet. Sauté for an additional 3-4 minutes until veggies are tender.
- Serve the chicken and veggies over rice, garnished with green onions and sesame seeds if desired.
Notes
Feel free to adjust the veggies based on your preference. For a lighter option, try using cauliflower rice.
