Description

A comforting one-pan casserole featuring browned ground beef, thinly sliced potatoes, and melted cheddar cheese, perfect for weeknight dinners or potlucks.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced (Yukon Gold or russets work well)
  • 1 ½ cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • ½ cup beef broth (or water)
  • ¼ cup milk (optional, for added creaminess)
  • Fresh parsley, chopped (optional garnish)


Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray or a little olive oil.
  2. Heat the olive oil in a large skillet over medium heat. Add the ground beef. Cook 5–7 minutes, breaking it into small pieces, until fully browned. Drain excess fat if needed.
  3. Stir in the chopped onion and minced garlic. Cook 3–4 minutes until the onion softens and becomes translucent. Remove the skillet from heat.
  4. Spread the beef and onion mixture evenly across the bottom of the prepared baking dish.
  5. Arrange the thinly sliced potatoes in a single layer over the beef, slightly overlapping each piece.
  6. Season the potato layer with salt, pepper, dried Italian seasoning, and paprika.
  7. Sprinkle the shredded cheddar and grated Parmesan evenly over the potatoes.
  8. Pour the beef broth (or water) around the edges of the dish. Drizzle the milk if desired.
  9. Cover the baking dish with foil and bake for 30 minutes.
  10. Remove the foil and bake uncovered for an additional 15–20 minutes, until the potatoes are tender and the cheese is golden.
  11. Let the casserole rest for 5 minutes, garnish with chopped parsley if desired, and serve hot.

Notes

For a lighter take, swap half the beef for ground turkey or use low-fat cheese. Use a mandoline for consistent potato slices but be cautious.
