Ingredients
- 1 lb ground turkey or beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 8 oz lasagna noodles, broken into pieces
- 2 cups spinach or kale, chopped
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Brown the meat: Start by heating a large pot over medium heat. Add the ground turkey or beef and let it sear until beautifully browned.
- Add aromatics: Toss in the chopped onions and minced garlic, stirring them together until the onions are soft and translucent.
- Incorporate the tomatoes and broth: Stir in the crushed tomatoes, broth, and Italian seasoning. Raise the heat to bring your mixture to a boil.
- Add the noodles: Once boiling, throw in the broken lasagna noodles. Cook until they’re tender, which should take about 10 minutes.
- Finish with greens: Stir in the chopped spinach or kale, letting it wilt for about 2 minutes.
- Serve: Ladle the soup into bowls, topping each serving generously with ricotta, mozzarella, and Parmesan cheese.
