Ingredients
- 1 cup lentils (green or brown)
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can diced tomatoes
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon thyme
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat a splash of oil over medium heat.
- Add the diced carrots and celery, cooking until softened, about 5-7 minutes.
- Stir in the minced garlic and sauté for an additional minute until fragrant.
- Add the lentils, diced tomatoes, vegetable broth, cumin, thyme, salt, and pepper.
- Bring to a boil, then reduce the heat and let simmer for 25-30 minutes, or until lentils are tender.
- Adjust seasoning to taste, serve warm, and enjoy.
Notes
