Description

Ingredients

  • 1 cup lentils (green or brown)
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can diced tomatoes
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • 4 cups vegetable broth
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat a splash of oil over medium heat.
  2. Add the diced carrots and celery, cooking until softened, about 5-7 minutes.
  3. Stir in the minced garlic and sauté for an additional minute until fragrant.
  4. Add the lentils, diced tomatoes, vegetable broth, cumin, thyme, salt, and pepper.
  5. Bring to a boil, then reduce the heat and let simmer for 25-30 minutes, or until lentils are tender.
  6. Adjust seasoning to taste, serve warm, and enjoy.

Notes
