  • 2 cups spinach, roughly chopped
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded

  • Optional: Fresh herbs like basil or oregano


Instructions

  1. Heat a skillet over medium heat and lightly grease it with olive oil or butter.
  2. Layer spinach, feta, and mozzarella on one half of each tortilla.
  3. Fold the tortilla in half, pressing gently to secure the filling.
  4. Cook each quesadilla for about 2-3 minutes on each side until golden brown and the cheese is melted.
  5. Carefully flip the quesadilla using a spatula, adjusting the heat as needed to prevent burning.
  6. When done, remove from the skillet, cut into wedges, and serve with fresh herbs or a side salad.
