Ingredients
- 4 flour or corn tortillas
- 2 cups spinach, roughly chopped
- 1 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 1 tablespoon olive oil or butter
- Salt and pepper to taste
- Optional: Fresh herbs like basil or oregano
Instructions
- Heat a skillet over medium heat and lightly grease it with olive oil or butter.
- Layer spinach, feta, and mozzarella on one half of each tortilla.
- Fold the tortilla in half, pressing gently to secure the filling.
- Cook each quesadilla for about 2-3 minutes on each side until golden brown and the cheese is melted.
- Carefully flip the quesadilla using a spatula, adjusting the heat as needed to prevent burning.
- When done, remove from the skillet, cut into wedges, and serve with fresh herbs or a side salad.
Notes
For a twist, consider adding sun-dried tomatoes or using goat cheese instead of feta.
