Ingredients
- 2 cups cooked shredded chicken
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) green chilies
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon oregano
- Salt and pepper to taste
- 1 cup Greek yogurt or sour cream
- Fresh cilantro for garnish
Instructions
- In a large pot or Dutch oven over medium heat, sauté the onion and garlic until softened, about 5 minutes.
- Stir in the cooked chicken, white beans, green chilies, chicken broth, cumin, chili powder, oregano, salt, and pepper.
- Bring the mixture to a boil. Once boiling, reduce heat and let it simmer for about 20 minutes.
- Once simmered, stir in the Greek yogurt or sour cream until everything is well combined and achieves a creamy consistency.
- Serve hot, garnished with fresh cilantro.
Notes
Feel free to substitute the Greek yogurt with sour cream. For a dairy-free option, use plant-based yogurt.
