Description

A hearty and nutritious white chicken chili packed with protein and flavor, perfect for weeknight dinners or meal prep.


Ingredients

  • 2 cups cooked, shredded chicken
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 cup Greek yogurt or sour cream
  • Salt and pepper to taste
  • Chopped cilantro for garnish


Instructions

  1. In a medium pot, heat a little oil over medium heat. Sauté the diced onion and minced garlic until they become translucent and fragrant.
  2. Add the shredded chicken, drained white beans, drained corn, cumin, chili powder, and chicken broth to the pot. Stir well to combine.
  3. Bring the mixture to a boil, then reduce the heat to low. Allow it to simmer for 15-20 minutes.
  4. Stir in the Greek yogurt or sour cream until everything is well mixed and creamy.
  5. Season with salt and pepper to taste. Adjust as needed for your palate.
  6. Garnish with fresh chopped cilantro before serving.

Notes

For a lower-sodium version, opt for low-sodium chicken broth. You can also substitute shredded chicken with rotisserie chicken to save time.
