Ingredients

  • 2 cups cooked shredded chicken
  • 1 can white beans (Great Northern or cannellini), drained and rinsed
  • 1 cup chicken broth
  • 1 can diced green chilies
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup Greek yogurt or sour cream (for creaminess)
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish (optional)


Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onions and sauté until translucent.
  2. Incorporate the minced garlic and cook for an additional minute.
  3. Add the shredded chicken, white beans, chicken broth, and diced green chilies. Sprinkle in the cumin and chili powder, and season with salt and pepper.
  4. Bring the mixture to a gentle simmer and let it cook for 20-30 minutes.
  5. Just before serving, stir in the Greek yogurt or sour cream for creaminess, and garnish with freshly chopped cilantro if desired.

Notes

For a deeper flavor, toast the cumin and chili powder in the olive oil before adding onions. Rotisserie chicken works great for a quick preparation.
