A comforting and nutritious white bean soup, perfect for chilly days and quick weeknight dinners.
Ingredients
- 2 cans of white beans, drained and rinsed
- 1 medium onion, diced
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 2 cups kale or spinach, chopped
- 1 teaspoon thyme
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and cook until it becomes translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the white beans, vegetable broth, and thyme. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes.
- Add the chopped kale or spinach and continue cooking for another 5-10 minutes until the greens are wilted.
- Season with salt and pepper to taste, and enjoy your homemade white bean soup!
Notes
