Description

A comforting and nutritious white bean soup, perfect for chilly days and quick weeknight dinners.


Ingredients

  • 2 cans of white beans, drained and rinsed
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 2 cups kale or spinach, chopped
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and cook until it becomes translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Add the white beans, vegetable broth, and thyme. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes.
  4. Add the chopped kale or spinach and continue cooking for another 5-10 minutes until the greens are wilted.
  5. Season with salt and pepper to taste, and enjoy your homemade white bean soup!
