Description

A quick and satisfying bowl featuring caramelized sweet potatoes, hot-honey coated ground beef, and creamy avocado over fluffy rice.


Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes
  • 2 cups cooked white rice
  • 3 tbsp hot honey
  • 1 ripe avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • Salt and freshly cracked black pepper, to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel (optional) and cut the sweet potatoes into 1-inch cubes. Toss them with 2 tablespoons olive oil, smoked paprika, cumin, and a pinch of salt. Spread the cubes in a single layer on a baking sheet. Roast for 25–30 minutes, turning once, until tender and slightly caramelized.
  3. While the potatoes roast, heat a skillet over medium. Add the ground beef and break it up with a spoon. Cook until browned and no pink remains, about 6–8 minutes. Drain excess fat if needed.
  4. Season the beef with garlic powder, a little salt, and freshly cracked pepper. Stir well to combine.
  5. Lower the heat and pour in the hot honey. Stir until the beef is evenly coated and the honey is warmed through, forming a glossy glaze, about 1–2 minutes. Taste and adjust seasoning.
  6. To assemble bowls, divide the cooked white rice between bowls. Top with the hot honey ground beef and roasted sweet potatoes. Add sliced avocado and sprinkle with chopped cilantro. Serve immediately while warm.

Notes

Substitute brown rice or quinoa for more fiber. Reduce hot honey for a milder sweet note. Opt for leaner ground beef for a lighter dish.
