Description

A warm and flavorful dish combining hearty chickpeas and aromatic garlic, perfect for breezy evenings.


Ingredients

  • 2 cups canned chickpeas, rinsed and drained
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup spinach or kale (optional)
  • Juice of 1 lemon


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, then sauté until the onion is translucent and fragrant.
  3. Stir in the cumin and cook for another minute to infuse the flavors.
  4. Add the rinsed chickpeas and vegetable broth to the pot. Bring it to a boil, then reduce the heat and let it simmer for about 15 minutes to meld the flavors.
  5. If using spinach or kale, toss it in now and let it wilt for a couple of minutes.
  6. Season your soup with salt, pepper, and a squeeze of fresh lemon juice before serving.

Notes

For a heartier soup, consider adding diced carrots or potatoes. For a creamier texture, blend half of the soup before serving.
