Ingredients
- 2 cups canned chickpeas, rinsed and drained
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 onion, chopped
- 4 cups vegetable broth
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup spinach or kale (optional)
- Juice of 1 lemon
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, then sauté until the onion is translucent and fragrant.
- Stir in the cumin and cook for another minute to infuse the flavors.
- Add the rinsed chickpeas and vegetable broth to the pot. Bring it to a boil, then reduce the heat and let it simmer for about 15 minutes to meld the flavors.
- If using spinach or kale, toss it in now and let it wilt for a couple of minutes.
- Season your soup with salt, pepper, and a squeeze of fresh lemon juice before serving.
Notes
For a heartier soup, consider adding diced carrots or potatoes. For a creamier texture, blend half of the soup before serving.
