Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. In another bowl, mix the milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry mixture and stir gently until just combined; avoid overmixing.
  4. Heat a non-stick skillet over medium heat and lightly grease it.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface.
  6. Flip the pancakes and cook until golden brown on the other side.
  7. Remove from the skillet and immediately top with cinnamon sugar.
  8. Repeat with the remaining batter until all pancakes are cooked.
