Ingredients
- 1 tbsp olive oil
- 1 lb ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 packet (1 oz) taco seasoning OR 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika
- 1/2 cup water or chicken broth
- 1 (15 oz) can black beans, rinsed and drained
- 1 cup frozen corn
- 4 cups cooked rice (brown or white)
- Optional toppings: salsa, avocado slices, sour cream or Greek yogurt, shredded cheese, fresh cilantro, lime wedges
Instructions
- Prepare rice according to package directions and keep warm.
- Heat olive oil in a skillet over medium heat. Add chopped onion and cook until softened, about 3–5 minutes.
- Add minced garlic and cook for about 1 minute until fragrant.
- Add ground turkey, breaking it up with a spoon, and cook until no pink remains, about 5–7 minutes. Drain excess grease if necessary.
- Stir in taco seasoning (or spices) and add water or broth. Simmer for 2–3 minutes to thicken.
- Add black beans and corn, cooking for another 3–5 minutes until heated through.
- Assemble bowls with rice, turkey mixture, and preferred toppings. Serve immediately.
Notes
Use ground chicken or lean ground beef instead of turkey. For low-sodium needs, opt for low-sodium taco seasoning or a home-made spice blend. Cauliflower rice can be used as a low-carb alternative.
