Description

Delightful and nutritious egg muffins with spinach and feta, perfect for busy mornings or lazy weekends.


Ingredients

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup diced bell peppers
  • 1/4 cup milk
  • Salt and pepper to taste
  • Olive oil or cooking spray for greasing muffin tin


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin with olive oil or cooking spray.
  2. In a bowl, whisk together the eggs and milk. Season with salt and pepper.
  3. Stir in the chopped spinach, feta cheese, and diced bell peppers.
  4. Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes, or until the muffins are set and lightly golden on top.
  6. Allow to cool slightly, then remove from the muffin tin and enjoy!
