Ingredients

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup milk
  • Salt and pepper to taste
  • Optional: diced tomatoes, bell peppers, or onions


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, whisk together the eggs and milk until fully blended.
  3. Stir in the chopped spinach and crumbled feta cheese, then season with salt and pepper.
  4. Pour the egg mixture into the muffin tin, filling each cup about three-quarters full.
  5. Sprinkle any additional diced vegetables on top if desired.
  6. Bake for 20-25 minutes, or until the muffins are set and lightly golden on top.
  7. Cool for a few minutes before removing from the tin.
  8. Serve warm or store for meal prep.
