Ingredients

  • 2 medium sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 cups vegetable broth


Instructions

  1. Place all the ingredients into your crockpot or a large pot, layering them nicely.
  2. Stir everything together until well combined.
  3. Cover your pot and cook on low for 6-8 hours or on high for 4-5 hours, until sweet potatoes are tender.
  4. Taste and adjust seasoning before serving; add fresh parsley if desired.
