Ingredients
- 2 medium sweet potatoes, diced
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 teaspoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 4 cups vegetable broth
Instructions
- Place all the ingredients into your crockpot or a large pot, layering them nicely.
- Stir everything together until well combined.
- Cover your pot and cook on low for 6-8 hours or on high for 4-5 hours, until sweet potatoes are tender.
- Taste and adjust seasoning before serving; add fresh parsley if desired.
