Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 2 cups diced tomatoes
  • 1 cup green beans, chopped
  • 1 cup zucchini, diced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, diced carrots, and celery; sauté for about 5 minutes until softened.
  3. Stir in minced garlic and cook for an additional minute.
  4. Pour in vegetable broth and add diced tomatoes, chopped green beans, diced zucchini, and dried thyme; season with salt and pepper.
  5. Bring to a gentle boil, then reduce heat and let it simmer for 20-25 minutes until vegetables are tender.
  6. Taste and adjust seasoning if necessary. Serve hot and enjoy!
