Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 2 cups diced tomatoes
- 1 cup green beans, chopped
- 1 cup zucchini, diced
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion, diced carrots, and celery; sauté for about 5 minutes until softened.
- Stir in minced garlic and cook for an additional minute.
- Pour in vegetable broth and add diced tomatoes, chopped green beans, diced zucchini, and dried thyme; season with salt and pepper.
- Bring to a gentle boil, then reduce heat and let it simmer for 20-25 minutes until vegetables are tender.
