Ingredients

- 1/2 cup peanut butter or almond butter
- 1/3 cup honey or maple syrup
- 1/2 cup chocolate chips or dried fruit
- 1/2 cup ground flaxseed or nuts (optional)
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, combine the oats, peanut butter, honey, and vanilla extract. Stir until well mixed.
- Add chocolate chips or dried fruit, along with any ground flaxseed or chopped nuts, and stir to combine.
- Roll the mixture into small balls, about 1 inch in diameter.
- Arrange the energy balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
