Ingredients
- 1 lb chicken breast, cooked and shredded
- 1 cup orzo pasta
- 6 cups chicken broth
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat a splash of olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until the vegetables are soft, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and bring it to a boil.
- Once boiling, add the orzo and cook until al dente, which should take about 8-10 minutes.
- Stir in the shredded chicken and the freshly squeezed lemon juice. Season with salt and pepper to taste.
