Ingredients
- 2 cups cooked turkey, shredded
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken or turkey broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup green beans, chopped (optional)
- 1 cup corn (optional)
- 1 cup potatoes, cubed (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, sautéing them until they soften, about 5 to 7 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Toss in the shredded turkey, broth, thyme, rosemary, salt, and pepper. Bring to a boil.
- Once boiling, reduce heat and let simmer for about 20 minutes.
- If using, add in the chopped green beans, corn, and cubed potatoes, allowing to simmer until tender, about 10 to 15 minutes more.
- Adjust seasoning to taste and serve warm.
Notes
For added flavor, consider a splash of lemon juice or cayenne pepper. You can also add noodles or rice for extra heartiness.
