Ingredients

  • 2 cups cooked turkey, shredded
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken or turkey broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup green beans, chopped (optional)
  • 1 cup corn (optional)
  • 1 cup potatoes, cubed (optional)


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, sautéing them until they soften, about 5 to 7 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Toss in the shredded turkey, broth, thyme, rosemary, salt, and pepper. Bring to a boil.
  4. Once boiling, reduce heat and let simmer for about 20 minutes.
  5. If using, add in the chopped green beans, corn, and cubed potatoes, allowing to simmer until tender, about 10 to 15 minutes more.
  6. Adjust seasoning to taste and serve warm.

Notes

For added flavor, consider a splash of lemon juice or cayenne pepper. You can also add noodles or rice for extra heartiness.
